Crispy snapper fillets BBQ recipe

A simple recipe which uses the heat of the barbecue to create a brilliant, crisp crust for the tender snapper fillets. The fresher the fish the better. |

6 red snapper fillets, cut 1/2 inch thick
Lemon juice (one lemon)
1/4 cup melted butter
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 cup bread crumbs |

Brush the red snapper fillets with lemon juice, and leave to stand for 5 minutes. Now pat dry with paper towels and brush each fillet on both side with butter. Season with salt and pepper, then roll the fillets in bread crumbs until both sides are lightly coated.
Place fish on the barbecue, flesh side down and grill for 8 minutes or until the fish flakes when tested with a fork. Serve with lemon wedges.
Serves 6.
