If you are vegetarian, or simply fancy a break from the standard bbq fodder, these great veggie recipes will come in handy.

BBQ Mushrooms

This is a quick but delicious recipe for vegetarians (be sure to place it on foil to keep away from meat juices). For each person wash, and peel if necessary 2 large flat cap mushrooms. Place upside down on foil and put on enough pesto to cover gills. Cook until mushroom is soft. Can add various veggie cheeses before cooking if want extra protein but not necessary.

Mushroom with Roule

1 large open mushroom, Fill it with olive oil, soya sauce and roule cheese, wrap in tin foil and cook.

Stuffed Peppers

This is pretty simple, just pre boil some rice (my personal preferance is that steam in the bag rice), cut the tops off of your peppers (the bigger the better), place the rice into a bowl, add cooked bacon bits (optional), gratted emantal and cheddar cheese. Season to taste, stuff the peppers with the mixture and replace the lid of the pepper back on to hold in the flavour. Wrap in tin foil and place on the back of the bbq, turning once in a while.

Once everthing else is cooked the peppers will be very soft and melt in the mouth. This also works in the oven for a convenient side dish.

BBQ Tortilla Sandwich

Take two tortilla wraps and make a sandwich of feta cheese, cheddar cheese, and homemade salsa (tomatoes, red onion, chillis, olive oil, lemon juice and mixed herbs).

Place the "sandwich" on the BBQ grill for about 2 minutes each side or until golden brown and the cheese has melted. Delicious and vegetarian too!

BBQ Mushrooms with Cheese

Wash some large flat mushrooms, then get some stilton cheese and place lices of cheese all around the mushroom (not to thick about a 1cm will be fine). Sprinkle some Worcester sauce over the whole mushroom with some pepper.

Then place on BBQ and gentley cook until the cheese melts into the mushroom and the mushroom is cooked, and enjoy.

Tip: test if mushroom is cooked stick a knife in the stalk it should go in and come out easily.

Pineapple
Mushroom
Onion
Red and Green Peppers
Quorn Meat

Get a stick, preferably a wooden one, and add the vegetables and quorn meat. Wrap in tin foil and then BBQ until piping hot.

Paprika Sweet Potato

It's really simple - cut some sweet potatoes into chunky pieces and boil for 5 minutes. Drain, toss in olive oil and sprinkle with paprika, then cook on the bbq till crispy! They go great with meat, and veggies love them too!

Simple Veggie BBQ Rolls

4 large crispy rolls (hollowed out)
4 oz button mushrooms
1 yellow , 1 red and 1 green pepper ( cut into chunks)
2 cougettes ( sliced)
1 aubergine (cut into chunks)
1 red onion (cut into chunks).
3 tbsp olive oil
1 tbsp soy sauce

Thread the vegetables onto 4 previously soaked skewers. Lie kebabs on a baking tray. Mix the oil and soy sauce to form a marinade. Pour over the vegetables. Allow to soak in. Barbeque the vegetable kebabs. When cooked, remove the vegetables from skewers and use to stuff the rolls. Wrap rolls individually in foil and place on the BBQ to cook for a few minutes, according to taste. When ready serve with salad.

Stuffed Peppers with Roquefort

Cook some short grain rice, cut the top off some red and green peppers and clean insides. Cut a piece of roquefort cheese into small cubes and mix with the rice, add a spoonful of toasted pine kernals and pile the mixture into the peppers and put the lid of the pepper back on - securing if neccessary with some wet string.

Wrap the peppers loosely in foil and put on the barbecue for about twenty minutes (depending on shelf height). Open and enjoy with a cold glass of pinot grigio and whatever else is on the menu that day!

Potato Skewers with Rosemary & Honey

baby new potatoes
2tsp rosemary
3tbsp honey
pre-soaked wooden skewers

Cook potatoes in boling water for 15mins. Mix honey & rosemary. Cut potatoes in half spread with honey & rosemary mixure, thread onto skewers. Grill on barbecue until lightly charred. Yummy!

Whisky sweet & sour veg

In a disposable foil tray put sliced onions, red & green peppers, tinned pineapple chunks. Coat the veg with 1/2 - 1 bottle of BBQ sauce and add a good glug of whisky. Give it a good mix and then cover the foil tray with tin foil and put it on the BBQ. Occasionally lift the foil and give the veg a mix.

When the veg is cooked through and the sauce has reduced, serve with your favourite BBQ meat (or veggie option).

Pasta Side Dish

3 tablespoons of olive oil
2 tablespoons of fresh lemon juice
1 tablespoon of honey

Mix ingredients together then put in a huge bowl with 6 oz of cooked pasta, chopped apple, grapes and cubes fresh honeydew melon.

Goes with any BBQ and suits even the fussiest of eaters, in fact I wish I could put a patent on it!
