Memphis Magic BBQ Sauce
3 tablespoons butter
1 tablespoons minced onion
tablespoons white vinegar
3 tablespoon tomato sauce
1 tablespoons worcestershire sauce
2 teaspoons sugar
teaspoon salt
½ teaspoon fresh ground black pepper
pinch cayenne
dash tabasco sauce
In a saucepan, melt the butter over medium heat. Add the onions and saute for 6 to 8 minutes, or until the onions begin to turn golden. Stir in the remaining ingredients, reduce the heat to low, and cook until the mixture thickens, approximately 20 minutes. Stir frequently.
Use the sauce warm. It keeps, refrigerated, for a couple of weeks.

Zesty Marinade
honey
soy sauce
sherry vinegar (or balsamic vinegar)
lemon juice (preferably fresh)
lemon pepper
garlic (either fresh or granules)
celery salt
Whisk all ingredients together & use as a marinade - heaven!

Fabulous Barbecue Sauce
quart apple cider vinegar
1 (20 ounce) bottle ketchup
1/4 cup paprika
1 pound dark brown sugar
1/4 cup salt
1 tablespoon black pepper
2 tablespoons red pepper flakes
1 tablespoon garlic powder
1/4 cup Worcestershire sauce
1/2 cup lemon juice
Mix together (in a large bowl) the apple cider vinegar, ketchup, paprika, brown sugar, salt, pepper, red pepper flakes, garlic powder, Worcestershire sauce and lemon juice. Pour into an empty ketchup bottle or other container and store in the refrigerator.

Special Whisky Sauce for Ribs
1 cup good Whisky
1 cup tomato sauce
1/2 teaspoon dry mustard
2 teaspoons Worcestershire sauce
1/2 cup dark brown sugar
1 tablespoon lemon juice
1/4 cup vinegar
3 cloves garlic, crushed
dash of salt and pepper
Combine all the above ingredients together and mix well. Apply to the ribs when they are nearly fully cooked (otherwise the sauce will burn rather than coat the ribs).

Super Sauce
1 cup ketchup
1 cup cider vinegar
1 cup whisky
1 cup brown sugar
1/2 cup finely chopped onion
2 tbs worcestershire sauce
2 tbs tabasco
Combine all ingredients in a large saucepan, bring to boil and simmer for 30 minutes or until slightly thickened. Add to meats for the final 5 minutes cooking (otherwise it will burn) or use as a table sauce.

Sweet Mustard BBQ Sauce
7 tablespoons dijon mustard
5 tablespoons clear honey
4 tablespoons vegetable oil
black pepper to taste
Mix all the ingredients together in a bowl and use as a glaze during cooking. Alternatively substitute 2 tablespoons of the dijon mustard with whole grain mustard.

Honey

Mix it all together and marinade!

Marinade for Chicken or Pork Kebabs
Good splash of Soy sauce
2 cloves garlic crushed
1 chilli crushed
1 inch of ginger crushed
2 pieces of bruised lemongrass (or bunch of lemon tyme)
The juice from 1/2 lemon
Good splash of extra virgin olive oil ( if on a diet leave out as it works just as well)
Mix well, add meat and marinade for at least 20 mins, skewer and cook.

Simple but Effective Marinade
2 tbl spoons olive oil
Juice of 1 lemon
Leaves off 3 sprigs tyme
Four cloves Garlic
Season with salt and pepper
Blend together and marinate meat for at least an hour before cooking but preforably overnight. Cook as normal. The oil stops meat sticking to BBQ, lemon tenderises meat and garlic and tyme infuses flavour along with the lemon.
Suitable with most meats but especially with chicken and lamb.

Quick Salad Dressing
For an extremely quick salad dressing melt a tablespoon of Mint Jelly in microwave add 1/2 teaspoon balsamic vinegar, and 1/2 teaspoon of water, mix and pour over salad stuff or new potatoes.

Syrup & Ginger Sauce
Mix 1/2 cup of white wine vinegar with equal quantities (2 tablespoons) of dark sugar, ketchup and syrup. Season with salt & pepper and add 2 teaspoons of grated ginger. Simmer for 5 minutes then allow to cool. Good on chicken and sausages.

Boozy BBQ Sauce
120ml rum
60ml soy sauce
60ml ketchup
70g chilli sauce
60ml Worcestershire sauce
220g brown sugar
2 cloves crushed garlic
3g Colemans mustard powder
ground pepper to taste
Put all ingredients in a saucepan and simmer for 30 minutes stirring occasionally. Cool and refrigerate ready for use.
