Fruit is a simple yet delicious way to round off a succesful barbecue -as this selection of readers recipes demonstrates.

Winning Recipe Entry - Boozy BBQ bananas

6 large bananas
6tbsp Baileys coffee liqueur
6 scoops luxury vanilla ice cream
drinking chocolate powder to decorate

Serves 6

Place bananas in their skins on the barbecue and cook for 5-10 min, turning several times until skins are evenly blackened.

Place on a serving plate and slit each banana along its length. Open each slit out slightly and spoon in liqueur

Serve immediately, with ice cream or a squirt of cream and a sprinkling of chocolate powder.

Summer Berry meringue

Put a selection of berries into a silver foil container (or something of a similar description) Strawberry, raspberry, blueberry, cranberry, chopped apple etc. Sprinkle with brown sugar, drizzle with honey and place on bbq until fruit is soft and warm.

Spoon over meringue nests and serve with ice-cream or whipped cream. Delicious!

Honey Grilled Apples

Cut granny smith apples into chunks approx the size of two bites. Brush generously with honey and bbq away!

Banana Surprise

For a sweet dessert, take banana and make a slit length ways. Then cut a mars bar into 1/2 inch slices and place in the middle of the banana. Wrap with foil and put on the barbecue for between 5/10 minutes. Enjoy, A little goes a long way.

BBQ Banana Dessert

Take a large ripe banana, peel just the top of the skin off. Still in it's skin, slice the banana in half. Fill with Barcardi Rum & chopped up Mars Bar.

Cook on the BBQ until the banana is soft and the mars bar has melted.

Orange Jelly Salad

1 Orange Jelly, 1 medium sized tin of crushed pineapple, drained. 2 carrots, peeled and shreaded.

Make orange jelly as normal and fill mold or a bowl. Stir in drained crushed pineapple and shreaded carrot. Place in fridge to set. Serve with any BBQ.

Dipping Dessert

After all the hot food, try this:

Put a shallow fire-proof bowl of hot water on the bbq. Stand another smaller bowl inside filled with chocolate pieces (plain is best). Have a plate of summer fruits (stawberries/raspberries etc) already prepared on the alfresco table.

When the chocolate has melted, take it to the table next to the fruit. Give everyone scewers (wooden ones work well) and get dipping. The choc bowl can be returned to the shallow hot water bowl to keep it melted.

Banana and Brandy Dessert

4 servings:
4 fairly ripe bananas
3oz of sultanas
2 table spns brown sugar
8 table spns brandy

Chop banana into slices at an angle,put into a bowl, and mix in sultanas and sugar. Put equal quantaties into tin foil pockets. Add 2 table spoons of brandy to each portion. Roll up tin foil to make a large pocket shape, this is to make steam so bananas and sultanas cook softly. Place onto BBQ and cook for 10mins. Serve with ice cream or clotted cream.

Aunty Vernie's Chocolate Trifle

3 eggs
3 tablespoons brandy
double or whipping cream
6 oz milk (or plain) chocolate, melted.
6 trifle sponges
cherries/waltuts/grated chocolate to decorate.

Seperate the eggs. Cream egg yolks & melted chocolate together in bowl. Blend brandy into this mix. Whisk egg whites till stiff. Fold whites into chocolate brandy mixture. Cut each trifle sponge in half (or 3 thinner slices?). Place one layer sponge slices on base of freezable dish, plastic tub or individual plastic (throw away) glasses. Cover with half the chocolate mix. Top with second layer sponge & second layer chocolate mix.

Chill (or freeze till needed) To serve (thaw) & top with whipped cream, cherries, walnuts or grated chocolate. A great tasting, grown-up sweet that's easy to make in advance & simple to serve.
