Grilled gammon steaks with spicy apple sauce

Ingredients

  • 3 tablespoons apple sauce

  • 2 tablespoons orange juice

  • 1 teaspoon grated orange zest

  • 2 teaspoons Dijon mustard

  • a pinch of dried thyme

  • a pinch of dried sage

  • 4 gammon steaks

Method

  • Prepare the barbecue for grilling. Mix together the apple sauce, orange juice and zest, and stir in the mustard, thyme and sage.

  • Brush the apple mixture over one side of the gammon steaks. Grill the coated side, over medium heat, for about 3 minutes.

  • Brush the top of the steaks with more mixture, turn over and grill for a further 3 minutes. Continue brushing and turning the steaks until done.

  • Serve immediately, with some additional apple sauce and mustard.
