Pineapple lime bbq salsa

A tangy and delicious bbq salsa that provides the perfect accompaniment to our spicy mexican pork chops! |

4 cups finely diced pineapple
1/2 cup granulated sugar
1/4 cup white wine vinegar
2 tablespoons fresh lime juice
1 teaspoon minced jalapeño pepper
1/2 teaspoon ground cumin |
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
4 green onions (white part only), finely sliced
1/3 cup finely chopped fresh basil

Combine the pineapple, sugar, vinegar, lime juice, jalapeño pepper, cumin, salt, and pepper in a large sauté pan.
Bring to the boil and cook over medium-high heat until the ingredients thicken to form a salsa texture. This should only take around 7 to 10 minutes.
When it's ready, mix in the onions and basil, and season with salt if desired. Serve hot over spiced bbq pork chops.
