For those of you left wanting more after your burgers and steaks, here are a few simple summer desserts you can finish off with.

Baked pineapple
You'll need: One fresh pineapple, maple syrup, rum, sugar and vanilla ice cream.
Remove the top (or the crown) from the pineapple before chopping the rest into six lengthways. Leave the peel in place.
Now add a teaspoon of sugar to your maple syrup, before drizzling over the pineapple slices. This helps to make a deliciously thick, sweet sauce. According to taste, pour a little rum over each slice.
Now wrap loosely in foil and grill on the barbie for around half an hour on a medium heat. Serve hot, straight from the grill, with a scoop or two of vanilla ice cream.

Banana with marshmallow and chocolate
You'll need: Bananas, marshmallows, chocolate, nuts.
Using one banana per guest, and leaving the skin on, slice the length of the banana (but without cutting it in half).
Now take a handful of pink and white marshmallows and cut them into thin strips. Push the marshmallow strips into the slit in the banana, as if filling a baguette. Next, cut small chunks from your favourite chocolate bar (Mars bars work brilliantly with this recipe) and cram in alongside the marshmallow, adding finely chopped nuts if you so wish.
Push the banana closed (or as closed as it will go with oodles of stuffing!) and wrap in kitchen foil. Now fire up the barbecue, pre-heating to a medium temperature - and place the foil-wrapped bananas on the grill.
After about five minutes remove from the grill, and, using a mitt to protect your hands, unwrap. The chocolate and marshmallows should be melting, and the banana soft enough to eat with a spoon. Delicious! |

Dessert kebabs
You'll need: Any fruit you can lay your hands on, sugar.
Dessert Kebabs are a great end to a filling barbecue feast. Simply take a skewer (pre-soaked) and feed generous chunks of peach, pineapple, apple, orange and pear onto it - just as you would with a meat kebab.
If you are feel like taking the healthy option, show the kebab to the grill for just a minute or two on each side and then eat warm straight from the stick.
If you have a little more room left to satisfy, roll the fruit kebab on a bed of brown sugar before placing on the bars. The heated sugar will, after only a few minutes, leave a hot and sticky caramel sauce all over the fruit. Serve with a napkin!
