Cheese and tomato smoky BBQ sandwiches

2 large, peeled tomatoes
8 slices of goats cheese
4 slices thick cut Italian bread
Olive oil spray |
Mayonnaise
8 large chopped basil leaves
Pinches of salt and freshly ground black pepper

Prepare your barbecue or traditional smoker for indirect smoking on low heat (follow instructions in owners manual). Use hickory or mesquite wood chips or chunks in the smoker box if you're using a gas barbecue.
Place tomatoes on the grill, close the lid and smoke (this will take around an hour on charcoal, or ten minutes on gas!) When the time has elapsed, remove the tomatoes from the grill and place them in the fridge.
Spray the bread with olive oil, before placing bread oil side down on cooking grate. Grill directly for 2 to 3 minutes or until toasted - then remove and spread the toasted side with mayonnaise. Sprinkle with the chopped basil.
Now cut each tomato into 4 slices, placing 2 tomato slices over the basil on each bread slice. Sprinkle with salt and pepper before topping each sandwich with a couple of slices of the goats cheese.
Serves 4.
