BBQ Mackerel with Mustard and Lemon Butter

Ingredients

  • 4 fresh Mackerel, cleaned

  • 225g baby spinach

  • salt and ground black pepper

  • 115g butter, melted

  • 30ml wholegrain mustard

  • grated rind of one lemon

  • 2 tablespoon lemon juice

  • 3 tablespoons chopped fresh parsley

  • 4 sprigs rosemary

  • 4 slices lemon

Method

  • Preheat the BBQ. Score the skin of the mackerel by making slashes into the skin of the fish, then season with salt and pepper.  Insert one slice of lemon and one sprig of rosemary into the cavity of each fish.

  • Mix the melted butter, lemon rind, mustard, lemon juice and parsley, season.

  • Place the mackerel on the BBQ and brush with the mustard butter, grill for about 10 minutes each side, occasionally brushing with more butter.
